The mere fact that carrots are a main ingredient in this breakfast from heaven makes the carrot cake pancakes healthier than the average gussied up pancake. The addition of vitamin rich raisins and walnuts in the batter makes it even better. And Jo-Anna added the nutritious chia seed into the mix too. Just use your portion control skills for the cream cheese drizzle and you are golden!

Get your spice cabinet ready for these flapjacks. Here is what you need:

  • 1 cup whole wheat flour

  1. Oooooh, I made a carrot cake pancake recipe from Joy the Baker’s cookbook once and they are tasty!
I don’t know that I have a favorite recipe-sometimes l want plain, sometimes oatmeal, sometimes pumpkin…all served with cold maple syrup and butter.

  2. Is it sad that I have never had carrot cake before in my life? Actually last night I thought about it, and I have never had cheesecake or key lime pie or boston cream pie or anything like that before in my life either.
